Beyond Vintage - Cave Blend

Cave Blend is a Rhone style red wine that started as a happy accident.  Multiple varietals from a single vineyard remained from racking and bottling one year that, in the Cave of course, were combined.  The result is a delightful red blend reminiscent of great wines from the classic Rhone region in France.  That serendipitous blend has been recreated each year since using Rhone varietals of multiple vintages from the same single vineyard.

At an elevation of 600 feet the Southeast facing vineyard provides the perfect conditions for world class  Rhone varietals.   Samples are checked daily as harvest approaches, measuring Brix, pH, and phenolic ripeness for optimum balance.   Then harvested in the dark morning hours and processed immediately to retain the grapes flavor and aromatics.

Fermented in small lots, at 70deg F (slow and low) to retain the varietal characteristics of this single vineyard wine.   A delicious blend of single vineyard Grenache and Syrah aged for 16 months in American Oak.
